Or Smoked Chicken and Waldorf Salad A salad of smoked chicken, apple, grapes, celery and walnuts bound in mayonnaise. …………………………………………………………… Roast Corn Fed Chicken Boneless corn fed chicken pieces cooked with a fresh thyme and lemon rub and roasted. Served with a pistachio and cranberry stuffing, caramelised pumpkin and a thickened wine jus. Or Aoraki Salmon Fillet. Pan-roasted fillet of south island salmon served on a dill, leek and lemon risotto. Or Pan-Roasted Lamb Moroccan Style A rump of new zealand lamb coated in a rub of moroccan spices and cornmeal then pan-roasted. Served with a moroccan salad of dates, apricots, capsicums, tomato, onion,
cucumber, toasted pistachios and spices and a yoghurt dressing.
